Thai Green Fish Curry
Ingredients
1 tbsp oil
2-3 tbsp green curry paste (jar), depending on taste
500g white fish (basa), chopped into bite sized pieces
1 can coconut cream
1/2 cup zucchini, sliced
1/2 cup green beans
1 cup broccoli, florets
1/2 cup snow peas, sliced
1/2 cup frozen peas
1/4 cup fresh coriander
1 fresh lime, quartered
2 tbsp almond meal to thicken (if required)
Method
Heat a large saucepan on the stove top.
When hot add oil and green curry paste.
Stir until you can smell the fragrance of the curry paste (about 3 mins)
Then add the coconut cream and mix together.
Add the zucchini and beans and allow to cook a couple of minutes.
Then add the fish and mix in to cover the fish with sauce, approx another 3 minutes.
Then add the broccoli, snow peas and frozen beans.
Cook until fish is cooked through and the broccoli is still tender and bright green in colour.
Stir in almond meal if required.
Serve with coriander sprinkled on top and with a wedge of lime.
*Delicious served with Cauliflower Rice or steamed rice.
