Lemon Cheesecake Balls
Ingredients
250 grams full fat cream cheese
zest & juice of 1 lemon
2 tablespoons honey (agave, rice malt syrup) *substitute with stevia for keto/sugar-free option
2 cups desiccated coconut + 1/2 cup for rolling in
Method
Chop the cream cheese into cubes and place into a bowl, add lemon and honey and blend in a food processor until smooth.
Add the coconut and blend again.
Using your hands form into balls and roll into extra coconut.
Place the balls in fridge or freezer to set.
