Fat Head Pizza Base

Ingredients:

1 1/2 cups mozzarella, shredded

85g almond meal

2 tbsp cream cheese

1 egg

pinch of salt

1/2 tsp dried rosemary

Method:

Pre-heat oven to 220 deg Celcius

Place mozzarella cheese and cream cheese into a microwave bowl/jug.

Microwave on high for 1 minute.

Stir the cheese and return to microwave for another 30 seconds.

Add egg, salt, almond meal and rosemary and mix well.

Place a sheet of baking paper onto the pizza tray and tip out the cheese base.  Lay another layer or baking paper over the top and using your hands spread out the pizza base evenly on the tray.  Remove the top layer of baking paper and prick with a fork.

Bake for approximately 10 minutes, top should be golden brown.

Using the baking paper flip the base over to make it extra crispy and add any toppings you wish.

Bake again for approximately 5 minutes until brown.

Enjoy hot

Topping ideas:  salami, ham, mushrooms, pesto, chicken, capsicum, onion, olives etc
