Steamed or Fresh Vegetables with Peanut Dip
Serves 1
Ingredients
1-2 Cups of mixed vegetables, A nice mix is Carrot, red or yellow capsicum ,snow peas and radish ( you can have raw sticks instead of steaming )
Peanut Sauce
150 mls water
1/3 Cup smooth peanut butter
2 Tsp. Fresh grated ginger
1 Spring onion chopped
2 Tblsp. organic soy sauce (coconut aminos, gluten free)
pinch of chilli powder
1 Clove garlic minced
1 Tblsp. fresh lemon juice
Method:
Prepare and steam vegetables, or slice for raw dipping.
Peanut Dip:
Bring the water to the boil in a pot and stir in the peanut butter, garlic, ginger, spring onion, soy sauce and chilli powder. Simmer for 2 minutes.
Remove from heat, stir in lemon juice and let cool or refrigerate to serve.
