Baked Okra Chips (lectin blocking)
Ingredients
500gm okra
1-2 tbs extra-virgin olive oil
2 tsp fresh thyme or ½ tsp dried
½ tsp dried rosemary
¼ tsp garlic powder
¼ tsp sea salt
Cracked black pepper
Pinch Cayenne pepper (optional)
Method
Heat oven to 230 deg Celsius
Cut of the stems of okra and slice in half lengthwise
Place into a large bowl and add oil and seasonings, mix around to be sure all okra is well coated with oil.
Place in a single layer on a baking sheet.
Roast in the oven for 15 minutes.
Turn over the okra and bake for another 15 minutes or until the okra is lightly browned and tender.
Serve hot.
