Sugar Free Blondies

INGREDIENTS:

2 cups of almond flour/meal

3/4 cup peanut butter (sugar free)

3/4 cup granulated erythritol (stevia - I use Natvia from Coles supermarket)

3 tbsp coconut nectar (or honey/agave)

1 tsp vanilla extract

1 tsp baking powder (gluten free)

10 tbsp milk (nut milk if desired)

1/2 cup of dark sugar free chocolate chips or chunks (most dark chocolate of 75% cacao are sugar free and have the benefit of being high in antioxidants)

METHOD:

Pre-heat oven to 180 C. Line a square baking pan with baking paper.  Mix all ingredients except for the chocolate with an electric beater/mix master.  When well combined (cake batter consistency) add chocolate chips/chunks, mix well and spoon into prepared tin.

Bake for approximately 30 minutes until golden brown.  Allow to cool before slicing into squares.  These taste delicious cold from the fridge.  Enjoy!
