Quick Pesto Chicken

Ingredients:

500gm chicken, thighs or breast

1 jar pesto

Method:

Cut chicken into cubes.

Pre-heat a fry pan, using small amount of coconut oil if required.

Toss chicken cubes into hot pan and cook until no pink in chicken.

Spoon jar of pesto into pan and heat through.

Simply enjoy.

This is a great dinner as the leftovers can be re-heated or served cold as a salad for a take to work/school lunch.
