Banana Loaf
Ingredients:
150g coconut oil
2 eggs
1 tsp vanilla
2 cups almond meal
¾ cup walnut pieces
1tsp baking powder
Method:
Preheat oven to 180 deg C
Line a loaf tin with baking paper
Mix all dry ingredients into a large bowl
With electric beaters whip coconut oil, eggs and vanilla until creamy
Add wet mixture to the dry ingredients along with mashed banana and stir until well combined.
Transfer into prepared loaf tin
Bake for approximately 50 minutes; test by poking a skewer into the centre of the loaf, if it comes out clean it is ready.
Allow to cool before slicing.
Serves 8-10
