Cauliflower Rice

Ingredients

1 whole head of cauliflower

Method

Cut cauliflower into chunks.

Add to a food processor fitted with an S-blade.

*Also delicious when broccoli is added

Process until cauliflower resembles rice sized bits, approx 2 minutes (do not process too long as it will turn more into a paste consistency.  If this happens it can still be used to thicken soups or stews etc). 

Place cauliflower 'rice' in a microwave dish with a lid and microwave on high for 6 minutes covered.  (do not add any water or liquid)

Once cooked fluff with a fork and use as a replacement to rice.

Can be stored in fridge covered for approx 2-3 days.
