Scrambled Tofu
Ingredients
1 tbsp coconut oil
1 cup mushrooms, sliced
1 onion, diced
1-2 cloves garlic
1 tspn turmeric
1 pkt silken tofu
1 cup spinach or kale
½ lemon or lime
Method
Heat oil in pan.
Cook mushrooms, onion and garlic until soft and slightly brown.
Add turmeric and cook another minute.
Add tofu breaking it gently in the pan but not too small it should still be a little chunky, cook 3-5 minutes.
Add spinach/kale and heat until wilted.
Serve with a wedge of lemon or lime.
