Flaxseed Foccacia
Ingredients
2 cups flax seed meal* (Golden Flaxseed or Brown)
1 tbsp baking powder
1 tsp salt
5 large eggs
1/2 cup water
1/3 cup oil (avocado or olive work well)
Method
Pre-heat oven to 180 deg Celsius.
Line a tray with baking paper or a silicon mat (approx 44cm x 34cm)
Place the dry ingredients into a large bowl and whisk to breakdown any lumps of baking powder.
Place all the wet ingredients into a blend and blend well, approx 2-3 minutes, scraping down the sides with a spatula half way through blending time.
Pour wet ingredients into dry and combine well, being sure to scrape the bottom and sides to incorporate all of the wet mixture.
Turn out onto prepared tray and spread evenly with spatula.
Bake for approximately 25 minutes until golden brown.
*flaxseed meal is best ground just before use, if using already ground flaxseed meal store remainder in the fridge until next use. Flaxseeds are also known as linseeds.
This foccacia bread can be cut into any size pieces that you require. Store in fridge for use. Also freezes well and toasts well.
You could also add herbs, olives etc.
