Gluten Free Pita/Wraps
Ingredients
1/2 cup Almond Meal/Flour
2 tbsps Coconut Flour
1/4 tsp Salt
1/4 tsp Baking Soda
2 Eggs
1/2 cup water
2 tbsp melted ghee
1 tsp honey
Method
Pre-heat oven 10 180 Degree Celsius
Line 2 baking trays with baking paper or silicon mats, put aside.
In a large bowl mix all the dry ingredients, breaking up an lumps of baking soda and mix well.
In another bowl whisk the wet ingredients until well combined.
Add the wet ingredients to the dry ingredients and mix well to combine.
Using prepared trays place 1/4 cup of mixture onto one half of a tray and shape into a circle, approx the size of a small dinner plate. You should end up with 2 x circles of mixture on each tray.
Bake for approximately 15-20 minutes until set and starting to turn golden on the edges.
Allow to cool for 5 minutes out of the oven before serving.
Serve with favourite fillings as a pita/wrap.
Can be used hot or cold, store any unused wraps covered in the fridge.
