Sweet Potato Crisps

Ingredients

250g sweet potatoes, white, purple or orange (a mix of all is visually appealing)

Coconut or Olive oil spray

Sea Salt

Method

Pre-heat oven to 180 degrees Celsius.

Line a baking tray with baking paper or a silicon mat.

Finely slice sweet potato, I use a mandolin for this but you could use a sharp knife (it is important that they are the same size for even cooking).

Place sweet potato slices onto the prepared tray(s) in a single layer.

Spray with oil spray and sprinkle with sea salt.

Place in oven to bake until lightly brown, you may wish to turn them after about 10 minutes to brown evenly (they should resemble chips when you take them out of the oven and be crunchy).

Allow to cool, then store in an airtight jar.
