Keto Life-Changing Bread
Ingredients
3/4 cup almond flour/meal
1/4 cup coconut flour
1 cup sunflower seeds
1/2 cup flaxseeds
1/2 cup almonds or Hazelnuts
2 tbsp chia seeds
3 tbsp psyllium powder or 4 tbsp psyllium husk
3 tbsp coconut oil or ghee
1 1/2 cups hot water
1 tsp salt
pinch of stevia
Method
Place all seed/nut ingredients into a silicon loaf pan and mix well. In a heatproof jug measure out hot water and add coconut oil/ghee, salt and stevia and mix until well blended. Pour into silicon loaf pan and mix well to combine being sure to get right to the bottom of the pan. Cover with a clean cloth and leave at least 2 hours to sit. Can be left overnight (I find this works well). To cook, pre-heat oven to 180 degree Celsius and bake loaf in middle rack for 20 minutes. Then turn out of pan and cook directly on wire rack in oven for approximately 40 minutes more, loaf should sound hollow when tapped. Remove from oven and allow to cool on a wire rack. Once cool slice into 12 slices and either place in fridge or freezer to use as desired. This is delicious toasted.
