Vegan "Cheese" Balls

Ingredients:

1 1/2 cups raw cashews, soaked for 4 hrs, drained and rinsed

3 tbspns coconut oil

2-3 tbspns nutritional yeast

1 lemon juiced

1/4 tsp salt

warm water, as required

3 tbspns dried cranberries, chopped

1/4 cup walnuts, chopped

Toppings:

1/2 cup raw walnuts, chopped

1/2 cup dried cranberries, chopped

1 cup flat leafed parsley, chopped

Method:

Place the first 5 ingredients into a food processor or high speed blender, blend until smooth. Add warm water 1 tsp at a time until creamy but not too runny mixture is formed.

Add cranberries and walnuts and pulse for 5-10 seconds until just incorporated into mix. Scrape into a bowl, cover and place in freezer for 15 minutes to firm up slightly.

line a baking tray or board with paper and add the toppings. With damp hands form the cashew mix into desired size balls and roll in the topping mixture until completely covered.

Place the balls onto a plate or in container lined with paper and place in the fridge or freezer approx 1 hour before serving.
