Walnut, Maple & Cinnamon Butter
Ingredients
2 cups walnuts
1 tbsp maple syrup (to taste)
1/2-1 tsp cinnamon (to taste)
Method
Place walnuts in a microwave proof bowl and microwave on high approx 2 minutes. Remove from microwave and stir well. Place back into microwave and cook another 2 minutes or until walnuts are ‘just’ roasted. Allow to cool.
Add roasted walnuts to a blender/food processor and process until smooth and creamy consistency (this can take up to 15 minutes depending on power of processor/blender).
Once consistency has been achieved add maple syrup and cinnamon (to taste) and process again until well combined. Adjust flavourings to suit.
Pour into a glass jar with an airtight lid and enjoy on everything?
* I find that making a smaller batch is not possible as most blenders/processors require a quantity of at least this size to blend into a butter consistency.
